Chicken Burrito Bowl w/Cilantro Lime Cauliflower Rice
  
Ingredients
1 Butterflied Chicken Breast
1 1/2 teaspoon garlic powder
1 1/2 teaspoon onion powder
1 teaspoon smoked paprika
1 teaspoon cumin
1 1/2 lime  
Coconut Oil
1 tablespoon of roughly chopped cilantro
1/2 cup sliced Red Onion
1/2 cup each of  sliced Green, Red and Yellow Bell Peppers
12 oz of Cauliflower Rice
Organic Black olives (may be omitted) 
1 thinly sliced fresh jalapeño pepper


1. Season Chicken Breast with 1 teaspoon of smoked paprika, cumin, garlic powder, onion powder and the juice of half a lime.
2. Heat enough coconut oil to cover the bottom of your skillet or grill pan. Pan sear your chicken breast on each side and finish off in the oven at 350 degrees. Chicken temperature should read 160 degrees on a meat thermometer. 
3. Sautee onions and peppers until soft in coconut oil.
4. Prepare Cauliflower Rice per package or recipe instructions. Be sure to cook out as much water as possible.
5. Add 1/2 teaspoon of garlic and onion powder to cooked cauliflower rice. Squeeze in the juice of half a lime and add 1 tablespoon of roughly chopped cilantro. 
6. Build your burrito bowl! With cauliflower rice as your base layer your peppers and onions, organic olives, chicken and slices of fresh jalapeño. 
7. Garnish with a spear of lime and enjoy!
